To know your butcher, is to love your meat. The resurgence of butcher shops over the last decade has brought with it many benefits. Purchasing meat at the local butcher shop results in the opportunity for a more fulfilling culinary experience. The offerings you will find may inspire you to try a new nose-to-tail recipe made with items not available at the average grocery store.  You will likely discover chefs most beloved ingredients like hard to find off-cuts of meat and offal (from the phrase, "off all" which is the animal parts which fall from a carcase when it is butchered). And perhaps most importantly, you will find it is nearly impossible to find a butcher who does not respect animals. That cannot be said for industrial meat producers who fill many grocery store cold cases.
