A carbohydrate is a macronutrient which serves as the primary source of glucose, the energy molecule the drives all of our bodily functions and physical activities. Carbohydrates come in the form of simple sugars, complex starches, and undigestible fibers. Simple sugars, including fruits, nectars, honey, root vegetables, and syrups, are easily digested by our body and cause an immediate glycemic response. Complex starches, including vegetables, beans, and whole grains, take longer to digest and cause a slower acting glycemic response. Undigestible fibers, found in all plant sourced foods, help maintain blood sugar and digestion. When eating carbohydrates, it's the quality, and not the quantity, that matters.
